Opening the restaurant is the focus of the second of two required courses for students in the Bachelor of Tourism and Hospitality Management Program. The courses are led by lab instructor Deanna Struthers. In the first course, students learn about how to successfully run a restaurant – from managing the kitchen to serving in the dining room, food safety and more. In the second course, students get to experience opening and running the restaurant.
This year’s menu includes starters, mains, desserts and drinks (alcoholic and non-alcoholic). Mains include shrimp linguine (gluten free pasta available), Chicken Korma, Shahi Paneer (vegetarian) and a Falafel Plate (vegan).
