Jennifer Guy

Jennifer is an assistant professor who spent two years (2018-2020) as a full-time lab instructor, teaching students how to manage their own foodservice operations. She is a two-time graduate from the Mount Saint Vincent University (MSVU), first graduating with a Bachelor of Science in Applied Human Nutrition (2000) with internship and subsequently graduating with a Master of Education in Studies in Lifelong learning (2010). Jennifer is a registered dietitian who has worked for a multinational corporation as well as in health care, academia and the food and beverage industry. She has travelled extensively and taught internationally. Jennifer’s research interests include food-based learning (nutrition), cross-cultural learning (adult education).

Prior to joining the Department of Business Administration and Tourism and Hospitality, Jennifer worked in the food and nutrition industry nationally and internationally. Earlier in her life, Jennifer worked in the Tourism and Hospitality industry in both Canada (Fairmount Hotels and Resorts) and Australia. After this, Jennifer spent 10 years as the Atlantic Territory Manger for Nestlé Healthcare Nutrition. More recently, Jennifer has taught, both undergraduate and graduate courses, in the Applied Human Nutrition Department as well as Faculty of Education at MSVU. Jennifer has also provided faculty supervision to nutrition students during their dietetic internship placements in foodservice management, nutrition care and community nutrition. Jennifer’s collaborative work on the MSVU Dietetic Bridging Project (2011) informed the development of a Sustainable Dietetic Bridging Process for the Atlantic Territory, which in turn, received the IQN Innovation Award, (Citizenship and Immigration Canada, 2015).

As a member of the Dietitians of Canada, Jennifer has taken on the role of Provincial Nutrition Month Representative in both 2015 and 2016. Jennifer has held a variety of positions on the Board of the Nova Scotia Dietetic Association (NSDA). Jennifer is also a member of the multi-stakeholder group for Internationally Educated Dietitians in the Atlantic Region as well as a co-faculty advisor for the Intercultural Food Bridging Society (IFBS) here at MSVU.

Currently enrolled in the Nova Scotia Inter-University Doctoral Program, Jennifer has worked as a SSHRC research assistant to Dr. Patricia Gouthro and received a variety of graduate assistantships. In 2018, Jennifer received a doctoral award from the Social Sciences and Humanities Research Council of Canada (SSHRC). For her doctoral work, Jennifer wants to explore how concepts of adult education and learning are understood and applied by educators and students in food-based courses in tourism and hospitality programs within Canada.
