A student working in Vincent's Kitchen on campusVincent’s Restaurant is a teaching kitchen and restaurant on campus at MSVU where students in the university’s Tourism & Hospitality Management program learn about running a restaurant. And it’s now open for its winter 2025 season!

For students, it’s an excellent experiential learning opportunity. And for the broader community (the restaurant is open to the public), it’s a chance to enjoy a delicious dining experience while supporting the next generation of tourism leaders.

With a menu featuring such delectable dishes as butter chicken and chicken mushroom linguine, Vincent’s welcomes you for a dine-in or take-away experience. To make a lunch or dinner reservation, contact vincents@msvu.ca or call/text (902) 225-5625. Reservations are not required, but seating is limited.

Those dining in at Vincent’s will be met with white linen tablecloths, dimmed lighting, and floral centerpieces. Students enrolled in THMT 2216, Planning & Management of Food Service Operations, rotate through the roles of manager, server, and cook immersing themselves in what it takes to run a restaurant, from developing a menu to delivering a quality experience to diners. In addition to hands-on learning, students earn their Serve Right Certificate, a certificate required to work as a server within the hospitality industry.

Visiting Vincent’s every year is a tradition. It’s inspiring to see students develop their skills and balance the demands of a professional kitchen while delivering an exceptional dining experience.”

Lab instructor Deanna Struthers gets to share her passion for food and beverage service with students throughout the class. She imparts her motto of “find a balance, perfection doesn’t exist, and know your worth” with her students, while continuously guiding them as they plan and operate ‘their’ restaurant.

The Tourism and Hospitality Management Department is grateful to their customers, including faculty, staff, students, friends, family, and its dedicated regulars, for allowing them to provide this unique experience to their students. As the students work through their nerves and occasional mistakes, the understanding and patience exhibited by the diners at Vincent’s help make this an excellent experience for all.

Vincent’s will be open for dine-in or take-out service for lunch and dinner throughout the 2025 winter semester.
